Notes on Texas BBQ: 21 Briskets

Barbecue may not be the road to world peace, but it's a start." - Anthony Bourdain

Bbq is a massive part of our culture in Texas. Not just the bbq but everything surrounding Texas BBQ, especially the king of Texas BBQ Brisket. What fuel did you use and what technology or lack of technology. What did your dad teach you or your granddad or uncle or did you teach yourself? It’s an art form. It’s a family legacy. It’s a story in each brisket.

Regionalism in BBQ is like wine in France … it’s a thing.
